 RHUBARB - BATTERS & BASEBALL -
 

It happens every Spring!
I get this unyielding yearning for rhubarb, until satisfied with the sight of this sweet-sour stuff at the local market.
I buy lots of it, then rush home to make a quick Rhubarb Crisp.
Rhubarb signals the beginning of baseball season, too, where a different sort of rhubarb begins with squabbles between umpire and pitcher.
Rhubarb became synonymous with a heated argument after Shakespeare's "with attitude" version in his dramas.

 DANDELIONS - PESTS?, OR PROTECTIVE HERB ?
 

Dandelions are loaded with nutrients, as listed below.
When harvested in Spring before they blossom, the young leaves are delicious in a tossed green salad.
DANDELION BENEFITS & NUTRIENTS:
More iron and calcium than spinach
More beta-carotene than carrots
Rich in vitamin C, potassium, phosphorus, thiamine, and riboflavin.
Serves as a diuretic, pain reliever, appetite stimulant
Relives bloating and constipation
Boosts bile production, improves fat metabolism
Has Antioxidants - helps prevent cell damage, the basis of cancer, heart disease and other degenerative conditions.
Dandelion taproot also is edible (best pulled Fall to Spring) - good liver tonic, often added to soups.
The greens are best in Spring before the plant blooms.
Dandelion greens have few if any unwanted side effects, according to Alternative Medicine Review.
The Dandelion is actually a valuable herb.
Be sure to eat only those dandelions that have not been exposed to lawn sprays.

 QUICK & EASY MICROWAVE CHOCOLATE CAKE
 

If you've baked cakes in a microwave, you're way ahead of me - until today when my conventional oven gave up the ghost, just as I geared up to make a chocolate cake.
So, what to do!?
Searching Google for microwave baking, I found loads of recipes and tips; then, wondering if it really might work - gave it a shot.
It not only worked, it was fast. The cake is delicious.
Here's the recipe I used:
Oil a glass baking dish. Set aside.
Heat for one minute in microwave -
1/4 cup cocoa with 1/3 cup water.
Set aside.
Mix dry ingredients:
3/4 cups plus 2 tablespoons flour
1 cup sugar (lt. brown or white)
1/2 teaspoon baking soda
1/4 teaspoon baking powder
Dash or two of salt
Whisk to blend well
Mix wet ingredients:
1/4 cup veg or olive oil
1/3 cup water
1 egg
2 teaspoons vanilla
Whisk well
Mix all together and pour into greased baking dish.
Cook on HIGH 6 to 7 minutes, or until cake begins to pull from sides.
Cool cake on rack for 5 minutes before removing from baking dish.
TIPS:
1. Turn baking dish half way through cooking time
Test with toothpick. If pick does not come out clean, cook longer
(Microwave Cooks.com tips say microwave cakes won't 'fall'.)
2. Microwave cakes, etc.,. may rise higher than in reg. oven, so use less batter.
3. Extra batter can be saved in fridge. Bring to room temp to use.

 HOT CHOCOLATE MIX
 

It's easy to make your own.

3 cups dry milk
1 cup sugar
1/2 cup cocoa
Mix well. Keep tightly covered.

TO MAKE ONE CUP HOT CHOCOLATE:

3-4 TABLESPOONS MIX
1 CUP BOILING WATER.

Optional additions:
Vanilla
Dash of cinnamon or cardamom
Dash of nutmeg
Two drops of peppermint extract
Coffee
